Pie-flavored Overnight Oats

Happy “Pi” Day!!! Instead of making traditional pie this year, I decided to go a healthier route and make pie flavored overnight oats. This way, Pi Day can last all week! The base overnight oats mix is the same in all of these, but the fruit and nut combos are inspired by some of my favorite fruit pies. The recipe below is for individual servings since I like being able to stack the containers in the fridge and pull them out as a convenient breakfast / snack. Feel free to multiply the recipe and make a big batch or make multiple single servings. I usually only make enough for the next 4-5 days.

Ingredients (per serving)

1/3 cup rolled oats

1 tsp chia seeds

1 tsp flax seeds

1 tsp hemp seeds

1 tsp sesame seeds

1/4 tsp maple syrup (you can add more or less based on your taste)

1/2 cup oat milk (or your choice of dairy / nondairy beverage)

3 drops vanilla extract

Peach Pie inspired: 2 tbsp chopped pecans + 1/4 cup chopped peaches

Blueberry Pie inspired: 2 tbsp slivered almonds + 1/2 tbsp blueberry jam

Strawberry Pie inspired: 2 tbsp chopped walnuts + 1/2 tbsp strawberry jam

Directions (PEr Serving)

1. Add the rolled oats, chia seeds, flax seeds, hemp seeds, sesame seeds, maple syrup, oat milk, and vanilla extract to a 1-cup container. You should use a container that has a lid and is airtight when closed.

2. Mix well until there are no dried pockets of oats. Then, top with the nuts and fruit (based on the pie flavor you want). Close and store in fridge, at least overnight.

3. Give it a quick mix before eating, then enjoy hot or cold!
