Roasted Purple Rosemary Potatoes
I read somewhere that purple potatoes are supposed to be healthier for you than regular ones, so of course I had to try them out! Turns out, I actually like the taste and consistency of them better than regular potatoes too. =) This is a pretty simple recipe (you basically just toss everything together and bake it). I made it for Thanksgiving, and because it's pretty easy and you can prepare everything ahead of time, it's perfect as a side dish to a big meal.
Ingredients
8 purple potatoes, cut into quarters
2 tbsp olive oil
2 cloves garlic, crushed
2 tsp dried rosemary, crushed
1/2 tsp sea salt
1/4 tsp black pepper
Directions
1. Toss everything together.
2. Arrange in a single layer on a 9 x 13 baking tray. Cover with foil and bake at 375 F for 15 min. Remove the foil. Bake for 15 min, flip over, bake for an additional 15 min.
