Lavash Pizza
For those of you who like thin crust pizza, this is a relatively easy pizza that always seems to works well. The only thing you have to be careful of is burning it since the crust is so thin. I used the veggies we had at home for toppings, but you can use what you like. I also like using fresh tomatoes instead of sauce, since the tomato / pasta sauce makes the crust soggy.
Ingredients
4 pieces of lavash bread (I use ones that are ~6 inches x 10 inches)
1/4 cup olive oil
2 cloves garlic, crushed
1/8 tsp salt
1/4 tsp pepper
1/2 tsp Italian seasoning
1/2 medium onion, chopped
1/2 cup corn
1/2 cup green bell peppers, chopped
1/2 cup zucchini, chopped
1/2 cup carrots, chopped
1/2 cup tomatoes, chopped (I use cherry tomatoes, but any will work)
1/2 cup broccoli, cut into pieces
1/2 tsp salt
1/2 cup cheese (optional, I use Chevre, but you can use any)
Directions
1. In a small bowl, mix the olive oil, garlic, salt, pepper, and Italian seasoning.
2. In a large bowl, mix all of the veggies and salt together.
3. Place one of the lavash breads on a baking tray. Spread ~2 tsp of the olive oil mix on the lavash. Spread ~1 cup of the mixed veggies on top of the lavash bread. Sprinkle about 2 tbsp of cheese on top.
4. Bake at 350 F for 7 minutes (edges will be light brown). Remove and cut into 4 pieces. Serve hot.
